There’s a reason Closed Circuit Television (CCTV) systems are still used where it counts. It’s a standalone system, not dependent on or connected to any other hardware (except power, and good ones have their own backup supply). That’s what the “Closed Circuit” part means. All connections are physical, so a wireless jammer can’t affect them.
Wifi-enabled alarms and cameras are easy to set up for non-technical people, but like almost all Internet of Things (IoT) devices, security isn’t an afterthought; it wasn’t thought of at all. Compared to a CCTV setup, they’re trivially easy to compromise or disable. (Plus, the wireless signals aren’t directional; anyone within range can tap into it, even from outside your home.)
Sure, they’re convenient and better than nothing, but I wouldn’t trust them if it really counted.
